Italian-Style Gazpacho
Ingredients
- 3 cups tomato juice
- 2 cups Bertolli ® Tomato & Basil Sauce
- 1 cup peeled, seeded and chopped cucumber
- 1/2 cup finely chopped green bell pepper
- 1/4 cup thinly sliced green onions
- 3 Tbsp. tarragon vinegar or cider vinegar
- 1 clove garlic, finely chopped
- 2 Tbsp. Bertolli® Classico™ Olive Oil
- 2 Tbsp. finely chopped flat-leaf parsley
- 1 Tbsp. finely chopped chives (optional)
- 1/2 tsp. freshly ground black pepper
Directions
- Combine all ingredients in a large bowl. Cover and refrigerate at least 4 hours. Serve chilled.
